Vinsplate celebrates National Spinach Day with recipes

Ambar Bhattacharya, abptakmaa, Kolkata, 25th Mar 2021 : Spinach is one of the most valuable and rich with Vitamins and Protins among the leafy vegetables. Spinach can be used in various ways to enrich the Vitamins in the human body. Today lets see how one can use spinach with fruits and soups by Vinsplate as 26th March each year, we celebrate National Spinach Day to acknowledge the health benefits of this leafy vegetable. Spinach Soup by Vinsplate

Ingredients : tbsp of olive oil, bunch of spinach, 2 spoons Oats, 2 to 3 cloves of Garlic chopped, 2 green tomatoes chopped, 2 cloves, Salt and black pepper, lime juice

Let’s make it
1.) Heat the olive oil in a pan. Add the cloves, garlic, oats, green tomatoes and sauté for 2 to 3 minutes.
2.) Add the blanched and chopped spinach. Sauté for a minute.
3.) Add 3 cups of water. Add salt and pepper. Give it a boil. Let the soup cool down. Once cool enough, blend it till it’s smooth. Add more water for the desired consistency.
4.) Serve it chilled or hot. Sprinkle little freshly crushed black pepper and squeeze of lime on top. Enjoy your soup.

Spinach apple salad by Vinsplate

Ingredients for the salad: Bunch of baby spinach, 1 apple chopped as you wish, 1 orange peeled, 1 small cube of chopped feta (optional), 1/4 red onion, thinly sliced, 10 to 15 sliced almonds, toasted, Few dried cranberries, Few mint leaves

For the dressing:
        •       2 tbsp virgin olive oil
        •       2 tbsp honey
        •       2 clove garlic minced
        •       1 tbsp dijon mustard
        •       Pink salt to taste
        •       Freshly ground black pepper

Making
        •       In a bowl, whisk together all the ingredients of the dressing and keep it aside.
        •       Mix all the salad ingredients in a large bowl except the feta cheese and the toasted almonds. Add the dressing, season with salt and pepper, toss to combine.
        •       Transfer the salad in a serving bowl, top it with the toasted almonds, dried cranberries, mint leaves and the feta cheese. Serve it chilled.

Spinach barley by Vinsplate

General information on barley – Barley is inherently cooling, anti-inflammatory and a wonderful detoxifier for the liver. Barley is the complete summer cereal. It is nutritionally rich in phosphorus and also contains calcium and iron.

Ingredients : 1 cup cooked pearl barley, 1 bunch of spinach, 1/2 cup of boiled chickpeas, 1 onion chopped, 2 cloves of garlic crushed, 2 chillies chopped finely, Salt and pepper to taste, 1 tbsp oil, Lime juice to taste

1.) Heat the oil in a pan. Add the garlic, onion, chillies to the oil.
2.) Add the spinach, toss it till it’s wilted.
Add the chickpeas and the barley. Add the salt and the pepper. Add the lime juice to your taste.

✅ Have it as hot breakfast or like a cool salad.
✅ You can have it any meal
✅ Left over of this can be made into barley spinach kebabs by mixing little breadcrumbs.

Spinach dip by @Vinsplate

Ingradients : 2 cups of hung curd, 1 cup Blanched and drained spinach, 2 cloves of garlic crushed, 1 green chilli chopped, 3 tbsp cheese grated (optional), 1 tbsp virgin olive oil, 1/2 cup boiled chickpea, Salt to taste

1.) Mix all the ingredients together and keep the dip chilled.
2.) Serve it with chickpea khakhraas and grilled potatoes. Publicity : Actimedia.
